ORGANIC
The small winery is located on the slopes of the Castle of Grinzane, with vineyards spread between the hills of Langhe and Monferrato. The grapes used for this wine grow in a vineyard with south-east orientation, at an altitude of 250 meters a.s.l. (820 feet a.s.l.) on a soil rich in clay and limestone in Costigliole d’Asti.
Destemming and soft pressing with cold maceration in the press, followed by pressing and clarification of the must. Spontaneous fermentation for approximately 10 days at controlled temperature until alcoholic fermentation is complete.
